Air fryed honey mustard chicken


  • Ingredients
  • 1/2 cup grain mustard
    1/2 cup honey
  • 1 Tbsp olive oil
  • 3 whole chicken thighs 
  • Salt and pepper
  • 2 sprigs rosemary (or a generous sprinkling of dried rosemary)
  • Freshly ground black pepper


1 In a medium bowl, whisk together the grain mustard, honey, and olive oil. Add a pinch of salt and pepper to taste. Add more salt and mustard until you get the flavor thatyou wanted.

2  Line the air fryer with foil and salt the chicken lightly and lay the pieces skin-side up in the air fryer. Spoon the honey mustard sauce over the chicken. Place the rosemary sprigs in between the pieces of chicken and cover the top it with foil to bake the chicken.

3 Bake for 13minutes at 200* and another 10minutes uncover at 185*c or until the juices run clear when the meat is pierced with a skewer.Remove the chicken and pour all the sauce on it.

Sprinkle some freshly ground black pepper over the chicken before you serve.

Basil roasted chicken and vegetables

I was too lazy to cook and so I cut up everything, mixed and put it in the oven. Waited for 40 mins or so and my meal is ready…. The vegetables are juicy and sweet. This is so easy and healthy, delicious too.

1 big potato, cut into chunks
1 wedge of pumpkin, cut into chunk
1 yellow onion, cut into wedges
1/2 red, green and yellow pepper, seeded and cut into chunks
6 firm plum tomatoes, halved
5-6 clove of garlic
1 bunch of asparagus and a bunch of broccoli
1 packet of enoki mushroom, ( cut off the bottom1/4 )
2 boneless chicken breast fillets, about 150g/5oz each
4 tbsp olive oil
11/2tbsp of dried basil
1 lemon, (juice only)
2 stalk of bruised lemongrass

Preheat the oven to 200C/ Gas 6/fan oven 180C. Spread the potatoes, pumpkin,onion, peppers, lemongrass,garlic and tomatoes in a roasting tin.Season with herb, salt and coarsely ground black pepper, olive oil and a tbsp of lemon juice.
Put the chicken on top of the vegetables. Season the chicken with herb, salt, pepper, olive oil and lemon juice.Cover the tin with foil and cook for 30 minutes.

Remove the foil from the tin. Add asparagus, broccoli and mushroom.Return to the oven and cook for a further 10 minutes until the vegetables are juicy and look tempting to eat and the chicken is cooked through (the juices should run clear when pierced with a skewer).
I was too lazy n put all vegetables at one go… If you want to retain the crunchiness of the asparagus and broccoli , put it in at the last 10 mins.
You can put in any vegetables that you like. I like lots of colour in mine….



Avocado and orange salad

This salad is really easy and simple. Aside from that is healthy and delicious. All you need are some avocados, oranges, cranberries and sugar..

1avocado, cut into cube
1oranges, wedges and cut into half
1tbsp of cranberries
1-2tbsp of sugar depend on individual taste
1-2 tbsp of lemon juice or orange juice

All you need to do is to mix everything up. That all.. Easy!!

Easy sausage and bake beans pie.

This is one of my son favourites. He always asked for more when I do this. This dish is very simple and a cheat. All I needed was some mashed potatoes , a can of bake beans, some mix vegetables and chicken sausages.

6-7 medium size potatoes, cubed
1can bake beans
1rice bowl of mix vegetables
A few chicken sausage, mine was a huge 1.

5tbsp of milk(might need more, making sure that it is not too dry)
2tbsp of mayonnaise (I’m using Japanese Mayo )
Salt and pepper to taste
2tbsp tomato ketchup(squeeze bottle, I squeeze it all over the filling)

Steam the potatoes till soft about 20 mins. While it is still hot, mash it and add milk, mayonnaise, salt and pepper. Mix well and put a side.

Preheat the oven at 200*c.Get a deep dish and pour in the bake beans, mixed vegetables, salt and pepper, ketchup and 2tbsp of water. Mix till everything combine. Next put in sliced sausages or ham or chicken pieces and top with mashed potatoes .
Then heat the pie in the oven for 20mins or till mashed potatoes started to brown. Now the pie is ready, cool it for 5 minutes before serving. Viola!!
