Smoked Japanese Geimei tea chicken.

Most of the time smoked chicken is done with Pu Er tea. I do not have any nice Pu Er and so I’m going to try it with Japanese Geimei Cha. The result was a smoked chicken with a wonderful Geimei cha flavour. The meat is very tender , moist and juicy.  I’ve put in less salt and so it is not too salty as in most of the smoked meat. Yummy….

1/2 a chicken


2 tbsp of rice

5 tbsp of brown sugar

2-3 tbsp of Japanese Geimei tea 


1/2 tbsp of five spiced powder

1/2 tbsp of salt

1/2 tbsp of brown sugar/ caster sugar

1 tbsp soy sauce

Some pepper

Method :

1. Combine chicken with marinade and mix well. Marinate over night.

2.  Preheat the AF at 200*c for 3 minutes. Put all the ingredients in a foil and mix well. Put the foil in the AF under the basket and the chicken in the basket. Attached the basket in the AF and heat it for 10 minutes with aluminum foil to cover the chicken. Remove foil and heat the chicken at  180*c for another 8mins or until the chicken have a nice brown colour. When is ready, switch off the power and leave it in the AF for another 2 minutes. 

3. Remove from AF and garnish with mint or parsley and serve hot.
