Old cucumber soup
This is an easy-to-prepare Chinese soup using soup bone,dried scallops, dried oysters, dried cuttlefish, red dates and old cucumber; which is ‘cooling’ in Chinese medicine. A few goodness of the old cucumber are to aid detoxification,anti-aging and ease sore throat.
400-500 gm Pork Ribs or Meat
1 Old Cucumber, de-seeded, sliced diagonally into thick sections with skin on
4 Dried Scallops
4 Dried Oysters
1 Dried Cuttlefish
4 Large Red Dates
Salt and Pepper, to taste
1. Fill a saucepan or small pot with water and bring to a boil. Put in pork ribs or meat and blanch for a minute to two to remove impurities. Discard the water and wash the meat clear of all scum and grit.
2. Put all ingredients into a pot and pour in water until just enough to immerse all the ingredients. Cook till it is boiling, then turn down the heat and simmer for at least 2hours. Season to taste.
3. When serving, scoop a little of each ingredient – meat, old cucumber slices, red dates and scallops into individual serving bowls and fill with soup. Serve hot. Recipe is good for four serving.
