School holidays started and my kids are free. I’m going to have two small helper today to help me with this project. The cheesecake project. They enjoy it tremendously and I’m spending quality time with them. Superb!!!

So here we go…..our cheesecake diary!!! 


16 OREO Cookies
3 tablespoons butter, melted

2 (250 g) PHILADELPHIA Cream Cheese, softened
1/2 cup sugar
1tsp vanilla 
1tbsp lemon juice

8 Oreo cookies (quartered)


1. Heat oven to 180*c or 350* F. Place 16 Oreo cookies in resealable plastic bag. Remove excess air and reseal bag. Finely crush cookies by rolling a rolling pin across the bag. Place the crumbs in a bowl. Add butter and mix well. Next press crumbs firmly onto a 9-inch springform pan.
2. Beat cream cheese, sugar, lemon and vanilla with electric mixer on medium speed until well blended. Add eggs, 1 at a time, beating just until blended after each addition. Pour over prepared crust and put in the quarter cookies into cream cheese batter. 
3. Bake for  45 minutes or until centre is almost set. Let it  cool before refrigerate it  for 3 hours or overnight. Sprinkle some Oreo crumbs on top and the cheesecake is ready. Enjoy!!
