Longevity Noodles are most commonly serve during CNY and Birthdays . It represent good health and a long life. As I have a lot of vegetables and mee Suah in hand,  I’m going to make longevity noodles.

Mee Suah / Flour Vermicelli in Soup

2litre of water or soup stock( chicken or Ikan bilis)

250gm prawn

Fish cake, sliced

1 pkt of dried taufu

6small bundles of Mee Sua (flour Vermicelli)

3-4 clove of garlic, sliced

Salt and pepper

Soy sauce to your preferences

And all the above vegetables; cilantros, spring onions, leeks and lettuces. Clean and cut to 1 inch length

( I’m not using any soup stock, all the sweetness of this dish came from the vegetables, fish cake and prawns)

** For birthdays we add hard-boiled eggs.

. Boil the water or chicken stock or ikan bilis stock.

. Heat a little oil in a wok and sauté garlic  till golden brown.

. Add taufu, fish cake and leeks, stir-fry for 2-3mins.

. Next put in the boiling water or stock and add the rest of the      vegetables in. Seasoning with salt, pepper and add soy sauce to your preferences.

. Cook it a min to two before putting in the noodles and prawns.

**mee sua will only takes a min to cook and it will expand quickly. Is best to put in just before serving.
